We take pride in sourcing many of our vegetables from a community project near the camp. This initiative not only brings fresh, seasonal produce to our kitchen but also supports employment in neighbouring villages. By partnering with local suppliers, we create dishes that highlight the authentic flavours of Zambia while also contributing to the development of the surrounding community. Our commitment to sustainability extends to the fish we serve, which is responsibly sourced to protect the delicate freshwater ecosystems of the Zambezi River. Quality Ingredients, Despite Challenges

Although we source some ingredients from reputable butcheries and farms in Lusaka, our remote location poses unique logistical challenges. Ongoing droughts and power shortages often affect the cold chain needed for meats and other perishable items. Nevertheless, our team works tirelessly to ensure that only the best products reach your table, adjusting where necessary without compromising on quality. Even in the face of these challenges, our chefs remain dedicated to offering carefully crafted dishes that highlight the finest available ingredients.

Embracing Seasonality

Baines’ River Camp’s remote location means that certain ingredients, such as avocados and other produce, are only available seasonally. We embrace this seasonality, tailoring our menus to make the best use of what is fresh and available. Although logistical constraints sometimes limit access to year-round ingredients, our kitchen team is skilled at adapting and creating meals that reflect the seasons while still maintaining high standards of quality.
